This project consists in studying the changes affecting rural society with regard to the evolution of the place of local shops, in particular bakeries, in these same territories. Indeed, consumption habits have particularly changed, the "hypermobile" consumer is distinguished by his ability to multiply his choices in terms of consumption. Bakers are forced to be adaptable to capture this "new consumer".
