Résumé :

Ce travail de recherche en socio-anthropologie appliquée à l’alimentation, vise à analyser les évolutions alimentaires en cours dans le Ferlo sénégalais. Cette zone est principalement habitée par des pasteurs peuls pratiquant l’élevage extensif. Depuis les années 1970, les perturbations climatiques (sécheresse) ont engendré de profondes mutations de l’activité pastorale et des conditions d’accès traditionnelles à l’alimentation. Ces deux éléments qui, auparavant, reposaient principalement sur l’accès et l’exploitation des ressources naturelles, dépendent aujourd’hui de plus en plus des marchés. À la lecture de ces modifications sociales et alimentaires, nous chercherons à comprendre comment elles sont absorbées par la population Peule qui de ce fait évolue vers une nouvelle forme de société.

The aim of this research project in socio-anthropology applied to food is to analyse changes in the way food is consumed in the Ferlo region of Senegal. This area is mainly inhabited by Fulani pastoralists practising extensive livestock farming. Since the 1970s, climatic disturbances (drought) have led to profound changes in pastoral activity and in traditional conditions of access to food. These two factors, which were previously based primarily on access to and exploitation of natural resources, are now increasingly dependent on markets. Looking at these social and dietary changes, we will try to understand how they are being absorbed by the Fulani population, who are thus evolving towards a new form of society.
